Grain Free Bran Muffins

This recipe for grain free bran muffins is a great alternative to it’s gluten and grain filled counter part. Using both shredded coconut (I used flakes and processed them until the texture resembled bran) and ground flaxseed gives a tasty thick and hardy texture. These muffins aren’t overly sweet making them good for keep blood sugar under control. Plus there’s a wonderful little pop of flavor with the added raisins.
